    Fillet of lamb - how to cook???

    I have a fillet of lamb in freezer, no idea what to do with it.
    Please share best and easy recipes!

    Roll it in heaps of salt and pepper, and seal it in a hot pan really quickly, just roll it til its brown all over.
    Put it straight in the oven and cook it on 180 for about 10 mins (depending on how pink you like it and how thick it is)
    Rest it for a good 10 mins

    Then just slice it and serve it with a salad or steamed veg.

    What Lime Slice said. For flavour variations...

    Roll in or marinade in lemon zest, garlic, pepper, rosemary, thyme, sumac and sesame seeds that have all been bashed a bit in a mortar and pestle (add a bit of lemon juice and olive oil if you prefer to marinade it) for a Greekish / Middle Easternish flavour. Really good with tzaziki or hummus.

    Or just rosemary and garlic.

    Or sesame seeds, soy and ginger with an Asian noodle salad.

    Also really good barbecued whole, then sliced (rather than roasted)

    defrost. bash it to tenderise. roll in zatar or other herbs/spices.

    Sear on both sides, then put in oven as per Lime Slice. Crumble fetta cheese on top.

    Serve with roasted/pan fried capsicum and steamed vegies.
