    Passionfruit

    What can do I do with passionfruit?
    My annoying MIL bought a million billion passionfruit because they were cheap and then dumped a bag of them on me.
    If I just had a few I can think of plenty of uses but I have no idea what to do with over a kilo.
    Does anyone have any ideas because they're going to go off if I don't use them soon?
    If anyone says jam I shall ignore them

    Do you ever make juices or smoothies? Passionfruit can be great to add to those, but that really only gets rid of one at a time.

    Umm, a cheesecake? I'm sure you could find some biscuit recipes that use it... How about just on cereal - like weetbix??

    With a fruit salad.
    aple and passionfruit crumble.
    Cake.
    In a smoothie.

    You can also put the pulp in ice cube trays and freeze them for when you want them.

    I've had this recipe on the Wome'ns Weekly website in my bookmarks for a while, but have never gotten round to making it...

    Passionfruit melting moments

    Serving size: Serves 10 or more
    Cooking time: More than 1 hour
    Course: Cakes/baking

    Makes about 25 biscuits. Biscuits can be made a week ahead. Join with butter cream close to serving.
    INGREDIENTS

    3 passionfruit
    250g butter, softened
    1 teaspoon vanilla extract
    ? cup (80g) soft icing sugar
    1 2/3 cups (250g) plain flour
    ? cup (75g) cornflour
    PASSIONFRUIT BUTTER CREAM
    80g butter, softened
    2/3 cup (110g) soft icing sugar

    METHOD

    Preheat the oven to moderately slow (160?C/140?C fan-forced). Line three baking trays with baking paper.

    Remove pulp from passionfruit; place pulp into a fine sieve and press down with the back of a spoon. You will need 1 tablespoon passionfruit juice for the Passionfruit Butter Cream.

    Beat the butter, vanilla and sifted icing sugar with an electric mixer until pale. Stir in combined sifted flours in two batches then stir in passionfruit pulp.

    With lightly floured hands, roll two level teaspoons of mixture into balls and place on oven tray about 3cm apart. Dip a fork into a little extra flour, press biscuits lightly.

    Bake in moderately slow oven for about 15 minutes or until biscuits are a pale straw colour. Stand the biscuits on the trays for 5 minutes, then transfer to wire racks to cool.

    PASSIONFRUIT BUTTER CREAM: Beat the butter and sifted icing sugar mixture in a small bowl with an electric mixer until pale and fluffy. Beat in the reserved passionfruit juice.

    Sandwich biscuits with a teaspoon of the Passionfruit Butter Cream. Dust with a little extra sifted icing sugar, if desired.

    Suitable to freeze.
    Not suitable to microwave.

    Thanks for all the suggestions.
    I should make every one of them and then I would use about half of the stupid things lol.
    I've just used your idea Ange and frozen the lot of them in ice trays. Out of sight out of mind lol.
    We're all going to be so sick of passionfruit stuff in a couple of months.
    Now to figure out what to do with the 4 kgs of grapes - don't say wine lol.

    We go through about 20+ passionfruit a week, Indah eats HEAPS at a time!!! It costs me a bloody fortune!!!

    i have seen passionfruit souffle (sp?) mmmmmm

    Grapes eh? You can also feeze them and feed em the kids as a frozen treat! Maybe not so good in the winter......

    Passionfruit tart

    200g Nice biscuits
    125g butter melted
    250g mascarpone cheese
    1/3 cup icing sugar
    1/2 cup passionfruit pulp
    200 ml cream
    extra passionfruit for decorating

    Crush biscuits. Add butter and mix. Press into 22cm greased tin with removable base. Refrigerate 30mins.
    Beat mascarpone with 1tbsp of the icing sugar in a large bowl using wooden spoon until smooth. Folid in passionfruit pulp. Whip cream with remaining icing sugar until soft peaks form. Fold into mascarpone mixture. Spread over base and refrigerate. Serve with extra drizzled passionfruit.

    Mini passionfruit souffles

    3 large passionfruit
    900ml ready made custard
    1 egg white

    Preheat oven 200 C. Cut passionfruit in half, scoop out flesh and keep shells. Strain the mixture into custard and stir to combine. Whisk egg to form soft peaks. Using a metal spoon lightly and quickly fold egg white into passionfruit mixture. Spoon into shells and bake 5-8 mins or until risen and golden. Serve immediately.

    I also have a passionfruit slice recipe somewhere - let me know if you want it and I will try and dig it up.

    We have a passionfruit vine and end up with buckets of the stuff! It's great in fruit salad and luckily DD loves them as I have a freezer full too!

    Can't help with the grapes sorry!

    I love passionfriut but i find when cooking with them you dont need alot.

    My favs are passionfruit slice

    Base
    1 cup dessicated coconut
    1 cup s/r flour
    1/2 cup caster sugar
    1 tsp vanilla essence
    125gm melted butter

    Mix all base ingredients together and press into a slice tin. Bake for 10 mins or until golden at 180 degrees celcius. Cool

    topping
    1 tin condensed milk
    juice from 1/2 lemon
    4 passion fruit

    Combine ant pour over base. Bake at 140 degree celcius for 10mins or until just firm to the touch. Cool in fridge

    I would eat 20 a day if i could afford passionfruit. They are like 80 cents each at wollies.

    Freezing is a goos idea. They will keep for a while. You can use them frozen in a punch or put them in the kids drinks instead of ice cubes.

    Never made anything with grapes but maybe you could freeze them too ???

    I found this! for 1ltr of icecream/parfait you use about 8-10 passionfruits

    1 cup coconut milk
    100 ml cream
    4 egg yolks
    90g castor sugar
    150ml passionfruit pulp (about 8-10)

    Method
    Place a sturdy stainless steel bowl or roasting tin in the freezer at least ? hour before making the ice-cream base. Bring the coconut milk and cream to the boil and set aside. Beat the egg yolks and sugar together until thick and pale, pour the coconut & cream mixture over the eggs and whisk until combined. Wash the saucepan and pour the mixture back into it, re-heating it gently and cook until the custard coats the back of a spoon. Don’t allow the custard to boil as it will curdle. Pour the custard into a bowl and chill overnight.

    Once the custard is chilled, stir the passionfruit into the mixture and then into the frozen bowl or oven tray and stir every now and again so that the custard takes on a creamy look without forming lumps.
    That sounds yum!

    They were 10c each at my woolies this week and 15 for a dollar at the flemington markets...
    They must have had a sudden glut...

    Usually I love them too - I even tried to grow a vine last year (didn't like my heavy clay soil ) but a giant woolies bag one one hit is a bit overwhelming lol.
    MIL doesn't really get it that just because something is cheap doesn't mean you need to buy the shop out. It's not really a bargain when half of it goes off because you can't finish it....

    Liz, I love the look of that parfait recipe but with the cold snap I'm in no mood for cold food
    I might make it in summer.
