    Question Pastry shell what to fill it with ?? ... Any ideas please : )

    Hi all,

    I have a twin pkt of (sweet i think shortcrust ??) Coles Bakery pastry shells DP purchased recently that need to be used before we head off on our Qld holiday next week ...

    So, could you please throw me some recipe ideas in what yummy fillings i could make

    TIA for any ideas

    P.S - If i make only one pie, could i Freeze the other shell ??

    Any ideas on how to make the filling ?? measurements, baking time, etc ... ... i guess that's what i mean't in asking

    ... If it helps i have a tin of condensed milk, eggs, 6 x lemons, berry jam, punnet of strawberries, 3 x red apples, 4 x bananas

    Oh my mum makes something really easy and yummo with the caramel condensed filling stuff

    I'll find out tomorrow what it is hun and let you know!

    Oh its got bananas on it too...

    Oh! I have that recipe in one of the books I have left! Is it Banoffee Pie?

    It's basically Caramel (so you could use a tin, or make it with sweetened condensed milk, butter and sugar like my recipe says), with banana and whipped cream on top.

    If you want that recipe, send me an email at my BB address and I'll scan it and email it to you, cos I'm too lazy to type it out.

    The other recipes in this book with a pie base are lemon meringue pie and lime chiffon pie and pecan pie and almond pear flan.

    For Banoffee Pie you boil the can of condensed milk til it's caramel or use the caramel one which is probably safer, the tins have been known to explode when boiling

    pour it into the pie crust when the caramel condensed milk is cold

    slice bananas and put it over the top of the caramel

    Top with whipped cream.

    It's YUMMO!

    ... i found a super easy creamy " Lemon Tart " recipe


    *** Twin pkt of Coles Bakery Pastry Shells
    *** 1 x tin Condensed milk (recipe is for 405gr tin but my tin was 395gr & was perfectly fine)
    *** 2 x medium sized Lemons (rind finely grated & juice)
    *** 1 x Egg (lightly beaten)
    *** 1 x Egg White

    ... Beat together until smooth & pour into both the pastry shells & bake in oven at 180C for about 20mins (watch that pastry shells don't burn) ... Cool on cake rack & then allow to set in fridge (about 1hr or so)

    Is YUMMY with a dollop of vanilla yogurt & some stewed strawberries to the side

    WARNING : Is very rich in taste BUT such a lovely lemon zesty taste
