    polenta

    Well i bought some yesterday, and I have to say, I'm not real keen on it the way they made it on the packet.

    What do you guys do with it?

    My dad makes it all the time...I am not sure what the instructions say on the packet but I find that adding plenty of salt helps (not the best thing I know!) and also a dollop of tomato paste mixed in makes it taste better too.

    Dont let it grow cold cause thats when it gets its "skin" on top and I cant stand that. You could also try googling polenta cakes, I have seen them make them at restaurants and serve usually chicken on top.

    It is an aquired taste tho.

    I made a polenta crusted pizza for dinner last night. Cooked up the polenta (with a bit of salt) until it was very thick, let it cool, pressed it into a pie/quiche dish brushed with olive oil (used wet hands to do this), brushed the polenta with olive oil and baked it in the oven for 45 minutes at 180. Meanwhile I'd cooked up some onion, garlic, capsicum, zucchini to put in the polenta pie crust which I'd spread with tomato paste and topped with grated cheese then back in the oven for another 10 to 15 min.

    Another idea I had was adding a tablespoon or two of parmesan to the polenta before pressing it into the pie plate.
    I guess you could try all sorts of toppings/fillings.....something to try anyway.

    I use it in savoury muffins. Just soak it in milk for 20mins before you need it, and add it to the mixture. I find that it gives them a nice texture.

    Ooh tops! They are great ideas!!!

    AND even if I decide I don't like it, I've used it all up trying.
