And I wondered, what foods do you think are underrated... Delicious, but you don't know many people that actually eat it?

What about pumpkin and zucchini muffins. I made them once and they were delish.

I've never combined my veg in a cake, but I do have an old recipe for a three veg chocolate cake that I must test one of these days!
