Thought of some more:

Large Pasta shells filled with ricotta and spinach. Cook the shells till al dente. Make the TMX ricotta, blitz with spinach, nutmeg, garlic and pepper and that's your filling. Then grab a few tins of tomato and blitz with some fresh or dried basil and oregano some seasoning and I add half a tsp sugar. Then pour over the top sprinkle with a little Parmesan and bake. Serve with salad.

Ratatouille is a great way to use up leftover veg you have.

Make your own tortillas, get two large chicken breast and cook in a pot with tinned tomatoes, cumin, ground coriander, salt, pepper until the chicken falls apart. Take the chicken out and fork it so it's all separated. Add it back to the pot. Serve with lettuce, cheese, tomato, spring onions, grated carrot and if you like sour cream. I make tortillas all the time and it's really easy. You can make them earlier in the day and pop them in a large zip lock bag. Then when you are ready to eat spritz some water I there and nuke for 30 seconds. This will soften them like the store bought ones. You can also coat thighs in home made taco seasoning and BBQ and have that sliced in the soft taco instead of shredded chicken. I also make burritos with mince and rice and cumin and beans. The. Coat the tortilla with refried beans, rice mix cheese and salsa then roll into a burrito and bake for about 20 mins. Serve with guacamole and salad.
