Large Pasta shells filled with ricotta and spinach. Cook the shells till al dente. Make the TMX ricotta, blitz with spinach, nutmeg, garlic and pepper and that's your filling. Then grab a few tins of tomato and blitz with some fresh or dried basil and oregano some seasoning and I add half a tsp sugar. Then pour over the top sprinkle with a little Parmesan and bake. Serve with salad.
Ratatouille is a great way to use up leftover veg you have.
Make your own tortillas, get two large chicken breast and cook in a pot with tinned tomatoes, cumin, ground coriander, salt, pepper until the chicken falls apart. Take the chicken out and fork it so it's all separated. Add it back to the pot. Serve with lettuce, cheese, tomato, spring onions, grated carrot and if you like sour cream. I make tortillas all the time and it's really easy. You can make them earlier in the day and pop them in a large zip lock bag. Then when you are ready to eat spritz some water I there and nuke for 30 seconds. This will soften them like the store bought ones. You can also coat thighs in home made taco seasoning and BBQ and have that sliced in the soft taco instead of shredded chicken. I also make burritos with mince and rice and cumin and beans. The. Coat the tortilla with refried beans, rice mix cheese and salsa then roll into a burrito and bake for about 20 mins. Serve with guacamole and salad.

I'll second Rouge. Home made flour tortillas are delicious and cost almost nothing. We like them for breakfast on the weekend with scrambled egg and sujuk (it's a sausage like a chorizo - or normal sausages are good too) and cheese. Or whatever you like really. The recipes call for vegetable shortening but I've substituted butter before when I was out of copha and for my brother uses the fat off roasts (which is a lot yummier than it sounds).
They are great for family cooking because one person can make the balls while another rolls and another cooks.
I have nothing to offer ATM as my brain is tired and my body worse, but I rarely buy beef mince. Chicken and turkey mince are much lower in fat and cheaper. If DH is insisting on regular I buy pork and veal mince.
My easiest meal is a stirfry. Veggies are usually what's in season or left in fridge. If there's meat I add it in. If not tough a bit of stock cube for flavour. For carb, rice/noodles (egg or rice).
It's cheap and healthy. If u want more flavour, add herbs or sauces (I can't be bothered).

Oh! I also sometimes make big batches of stuff when I see meat on special. Eg big batch of curry or casserole or bolognaise sauce (can be used for spaghetti Bol or even lasagne base) & freeze them.

fried rice is another that can be spread over a couple of meals. you can bulk it out with lots of veg, use diced ham instead of bacon. add chicken/egg if you want to up the protein for one of the meals.
