I make a pork casserole with leg steaks. The recipe is an old one of my Granny's that calls for cold cooked roast pork (which we rarely have) so I use fresh pork instead...it is delish:
Pork & Lemon Casserole
500g cold pork, leftover from a pork joint, cut into cubes OR 500g pork leg steaks
Pepper and salt
2 teaspoons of chopped parsley
4 sage leaves
1 teaspoon mixed herbs
2 blades of mace
1 teaspoon grated nutmeg
2 teaspoon lemon rind, grated
Juice of a lemon
Some good gravy
Mix all the ingredients in a greased casserole
Top up with the gravy
Cover and bake for 2 hr at 150`c
I asked DH what he wanted me to do with them and he said Sweet and Sour Pork which I had thought of as well!! So it is just simple sweet and sour now!!
