    Recipes with carrots

    Our new fridge is giving me the pips.
    It is too cold then too hot arhhhh anyhow all my fresh veges and fruit seem to freeze then are useless!

    My carrots are all soft and bendy .. but dont want to waste them

    so i need creative recipes (dinner prefered) ...

    i chuck carrots into everything!! They are so easily grated into almost anything

    Stews, casseroles, quiches, carrot cakes, strifries, bolognese, etc!

    When they are floppy, i tend to roast them in oil in the over! yummmm!!!

    Or you could do a carrot cake? Carrot muffins?

    quiche:

    2 grated carrots
    1/2 onion chopped
    1/2 cup frozen corn
    1 cup cheese (or in my house we avoid cheese and add 100gm chopped ham for that extra salty flavour)
    1 zucchini grated (or a handful of finely chopped spinach)
    6 eggs
    1 cup cream (in my house its rice milk)
    1/4 cup self raising flour

    Mix it all together (beating the eggs first and then mixing through everything else) and pour into shell....

    Definitely with the thick icing! Especially if its been chilled....how refreshing!
