I like making stewed/poached pears with vanilla beans - you canfreeze this too, nice on cereal, poride, ice cream etc
also a delicious pear and chocolate crumble... not really summer food but SO YUM
here is a recipe
8 pears, peeled, cored and cubed
Grated zest and juice of 1 lemon
50g golden caster sugar
100g Plain Chocolate roughly chopped (it is also nice with choc with ginger in it) and you can also use choc chips
For the crumble
175g butter, chilled and diced
200g plain flour
50g Roasted Chopped Hazelnuts (optional)
50g Porridge Oats
125g demerara sugar
Method
Preheat the oven to 180?C. Place the pears, lemon zest and juice, sugar, and 50ml of water in a large pan and heat gently for 10 minutes or so until the pears are tender.
Meanwhile, rub the butter into the flour until it resembles breadcrumbs. Stir through the hazelnuts, oats and sugar.
Spoon the pear with a little juice into an ovenproof dish. Scatter over the chocolate, then the crumble mixture, and place on a baking sheet.
Bake for 25-30 minutes until golden. Meanwhile, return the remaining pear juice to the heat, bring to the boil and reduce by half. Serve the crumble warm with ice cream, or chill and serve with extra thick cream and the reduced pear juice.
Baked pears are delicious for dessert....................
Cut pears in half and remove core, sprinkle with brown sugar, dot with butter. Bake in moderate oven for 30-40min. My granny adds a splash of water but i don't bother. Serve hot with cream and/or icecream.
