    Rhubarb

    I bought some rhubarb as DP absolutely loves it, I was going to make a cake with it but I only have about 200g. I have a banana/vanilla cake in the oven ATM and had left over banana so does anyone know it rhubarb and banana go together? I know apple & rhubarb do but I don't want to waste the bananas.....Ooo could all three go together??

    I found this from the Tartelette blog (google it):

    Rhubarb Banana Cupcakes with Cream Cheese Frosting:

    3 cups flour
    1 cup sugar
    1 tsp baking powder
    1 tsp. ground ginger
    1 tsp. ground cardamom
    3 eggs
    3/4 cup oil ( I used apricot)
    1 tsp. vanilla
    grated zest of one orange
    2 bananas, mashed
    1 cup roasted rhubarb

    Combine the dry ingredients in a large bowl (flour through cardamom). In a separate bowl, stirr the eggs and the oil. Add the bananas, rhubarb and orange zest. Add to the dry ingredients and stir just until combined. Divide into muffin lined tins and bake 35-30 minutes or until a toothpick inserted in the middle comes out clean.

    Cream cheese frosting:

    1 stick (115 grams) unsalted butter, room temperature
    8 ounces (227 grams) cream cheese, room temperature
    2 cups (230 grams) powdered sugar, sifted

    In bowl of electric mixer, beat the cream cheese and butter, on low speed, until very smooth with no lumps. Gradually add the sifted powdered sugar and beat, on low speed, until fully incorporated and smooth. Pour into a piping bag and decorate the cupcakes.
    The pictures look fantastic! I want some now!

    YUMMO!!! Sounds delicious doesn't it?? I think I will have to give it a go! The pictures won me too! I'll need to get a few things that I don't have tomorrow (no car today )

    I made the cupcakes yesterday and they are DELICIOUS!!!!

    I needed more rhubarb in it but for some reason Woolies hasn't been getting it, might go to the markets in the morning.....I'll definitely be making them again! Thanks again Cai

    I can't see a reason why banana and rhubarb wouldn't go together. Rhubarb is a bit tarty, so anything sweet to balance it is fine. My all time favourite is strawbery and rhubarb. My mum used to make it into a compote or a jam. The compote is lovely with ice cream...
    Yumm! I think I might have to make some.

    Hey Tannis those cup cakes turned out lovely,well done hun,makes me want to go & whip something up for the kiddies now,lol.I might have a go & make them,they would be nice with a cuppa.
