    Rice salad

    Ok, well in my quest to enlarge my salad repertoire (mostly just do mixed salad containing anything and everything that occurs to me at that time) I've found myself thinking idle thoughts about rice salad.

    My Nanna used to make a disgusting rice salad - very bland and seemed to contain a tinned element? (Was the rice salad actually out of a tin? or the capsicum? corn?) Ah poor Nanna most of her salad ideas seem to revolve around canned ingredients, oh yeah except the one that had shredded iceberg lettuce and sugar...WTF?....I digress.

    So it occured to me that theseadays when we're a bit cleverer about spices and rices and things there are prolly some REALLY nice (read = not bland) rice salads out there.

    Anyone got a recipe that's worth trying?

    My favourite salad is a rice salad : Curried Rice Salad.

    Basically - you cook a cup of rice, put it in a container and add a chopped onion (whatever type), 1 tbsp curry powder, drizzle of oil and drizzle of white vinegar and stir it up. Leave for a few hours (I leave it overnight) then add chopped celery, tinned peas (LOL - but they're yummy) and mayo. Stir it up and add more curry powder if you think it needs it (I usually do!). I used to live on this Salad in summer when I was growing up. For a while there I tried it without the celery and without the onion - but it's really at it's best with all these things in it.

    My mum also used to do a simple rice salad which was cooked, cooled rice to which you added fried bacon & onion with a little oil (usually just what they were cooked in). Very nice!

    Oh, yeah - and:

    the one that had shredded iceberg lettuce and sugar...WTF?....
    I don't think that qualifies as a salad!

    can't find my recipe at the moment will look later but if ya want a yellow salad without curry cook rice with safron in the water

    on and iceburg salad my MIL make the most horrific egg salad ice burg lettuce shredded, a cup of cream, sugar and mashed eggs ewwww

    i do one with shredded chicken, capsicum, corn(yup from a tin) saltanas, orange and a little bit of oil based dressing(french, italian what ever)

    I know it's a little late, but I had to share this recipe with you. It's my sister-in-law's, but I've made it my own now

    I make it for friends when they've gotten home from hospital with their new babies... this rice salad totally stops the food cravings when breastfeeding. I serve it will grilled marinated chicken (marinate in lemon, garlic, chilli & olive oil) and plain greek yoghurt.

    I just use 3 cups cooked brown rice, lots of chopped mint, a handful of craisins (dried cranberries), 1/2 bunch spring onions, handful raw cashews, 1/2 red capsicum.... with a dressing of sunflower oil, soy sauce, crushed garlic & lemon juice.
