I normally partially cook spuds & let them cool... I like to add chopped apple (granny smith i find the best) & chopped walnuts & then mix in any mayonaise that you like & as much as you like... simple but yummy....
For a variation on mayo (particularly if dieting!) - mix together honey, dijon mustard, olive oil (onions are optional). Make the consistency sort of liquidy and then add fresh herbs (thyme, parsley etc) whichever you like.
2 large sweet potatoes, cubed (about 1 cm x 1 cm)
4-6 rashers of bacon, diced
2-3 sticks of celery, diced
1-1.5 cup of Hellman's whole egg mayonnaise
Bake the sweet potato until golden. Fry bacon. Place bacon, sweet potato and diced celery in fridge to cool. Once cool enough, stir through mayonnaise, just enough to coat.
instead of mayonnaise on the potatos I use extra virgin olive oil, that has had a peeled & chopped/bruised garlic clove soaking in it overnight in the fridge, and sone chopped spring onions.

There seems to be such a wealth of knowledge out there I thought I'd try and tap it - does anyone have an interesting cous-cous salad recipe? I've tasted a few in restaurants that I really like - warm and cold - but can't seem to find a good recipe.
Im really annoyed, I had a GREAT one and I can't think of it. It was cold and the dressing had honey and lemon. It had mint and coriander and pumpkin through it (diced pumpkin cooked and then cooled). I have a feeling it was in a marie claire cookbook, so if anyone has one of them they might know the recipe.
