I'm such a boring cook so I probably can't help any but I'll try. I do things like pasta, zucchini slice, baked potatoes, rice etc.

My kids favourite one is a rice dish the Japanese girl we hosted taught us.

It's basically a layer of cooked rice with some vegies spread over the top covered with heaps of white sauce and topped with cheese. I also add some Japanese seasoning that she gave me but I can't tell you what it's called becuase the label is all Japanese lol.

DP does a yummy potato side... mmm

Partially boil potatoes cut into 1/4, once they are cooked (enough to stay in shape and not fall apart)
Heat oil/butter in a pan with mixed herbs and garlic, toss potatoes and cook for a couple of minutes.
Add grated cheese and allow to melt over potato (even better if it goes a little crisp)
    Then serve.... Mmmmmm

I cheat and use the pasta sides dishes aswell... YUMMO

Great thread, i need some new ideas aswell.

A favourite here which we can't use atm because the Bear is on a low carb diet
pan fry some small bits of bacon, throw in some potato gnocchi (uncooked straight from the pack) toss it around until the gnocchi is lightly golden brown, put in a bit of shredded spinach, put on the lid and let it steam for a minute or two, season to taste!
    Yummy!

Gourmet cook that you seem to be, I'm sure you know these but here goes.....these are what i do if im over steamed veg:

Creamed potatoes is delish, I don't have it often though, it's quiet....decadent (and fattening!). It's got sliced potatoes and onion, milk, cream and if you like some cheese sprinkled on top, all put in the oven and baked.

I often make a quick veggie stirfry of julienned carrots, baby beans, broccolini, and snow peas with a little garlic, peanut oil, sesame oil, honey soy and toasted sesame seeds or sometimes almonds.

Mushy peas (just a a tiny bit of bi carb soda to water and boil them (tiny as in a pinch!)

    Buttered mushies are delish

BBQ'd corn on the cob in the husk, then butter and spicy salt on it(.....oh yum, might have to do this tonight!!)

Shredded cabbage with onion and bacon

Baked broccoli and cauli with cheese sauce (gratin?)

    HTH and enjoy!!

    Bean side dish
    blanch beans
    fry off bacon and crumble
    toast pinenuts
toss all together with some lemon juice

    Zucchini and tomato
Slice zucchini and tomato (or use cherry)
Heat Butter and/or olive oil in a saucepan
Add zucchini and tom, grind through a lot of black pepper
Stir a bit, put on a lid if it looks like it needs it.
Simple, but works very well with homegrown veg with lots of flavour.
