Shepherds Pie

Put 4 or 5 large potatoes, diced on to boil (stovetop makes much nicer mash than microwave)

I make a basic savoury mince:

Brown mince (500g or more if you want to make a big one) with 1-2 onions, add in 1-2 tab tomato paste, a slosh or 2 of worchestshire sauce and a teaspoon or 2 of chicken stock powder (or a cubeor 2), add 2 cups frozen veggies (I use something like peas, corn, carrots, beans) and add enough water to cover. Simmer and allow to reduce down - you may need to thicken slightly with cornflour blended with water.

Then mash the potatoes - I used a potato ricer to get them nice and smooth (or press through a seive, or just mash with a masher!), with enough warm milk, a couple of teaspoons (or more if you don't care about your waistline) of butter, salt and pepper.

Spread over the top and dot with butter (or I like to sprinkle over grated cheese instead). Bake in moderate oven until brown. Mmmm yummy!!
