I made these tonight... and OMG I'm in love!
We normally make garlic & rosemary shallow fried potatoes (we use a whole 750ml bottle of vegetable/canola oil and then store the oil in the container, topping up if needed) and this recipe is a similar principle. Get yourself some potatoes and peel them. Depending on size you might want to cut them in half or quarter length ways (so you have 4 long pieces of potato) then put the potato in a freezer bag and get your trusty wooden rolling pin or mallet and smash the potato. I did find it a little tricky, but it definitely takes out the days stressesNow you want them lightly smashed not mashed, so don't go crazy. Just squash them a little. If some are more squashed then others its ok, it adds to the overall rustic look of the dish. Fry in hot oil for about 10-15 mins till its all golden brown. Scoop out into a dish lined with paper towel and salt generously.
