Hello, I am 10 weeks away from baby number 2 and since I haven't really done any organising yet I thought it was about time to get serious!
Over the next few weeks whilst I still have the energy I want to stock the freezer with meal ideas to cover the first couple of weeks being home with the baby. Last time I left it till the last couple of weeks and ended up being induced early due to blood pressure so I never got the chance and we relied a lot on takeaway as nobody else offered to cook for us!
My Family is vegetarian so my ideas for the freezer so far are:
1. A vegetarian lasagne.
2. Veggo Bolagnaise.
3. 2 or 3 different batches of soups for lunches.
4. A couple of vegetable puff pastry pies.
That's all I can think of at the moment that will freeze well but we are going to need more than that to cover a couple of weeks. My daughter doesn't like stir frys or dishes with a lot of rice in them so they are out the window...has anyone got any simple and quick veggo recipes that will freeze well over the next couple of months?
Also, do roast veggies freeze well and how long for? Our family loves mountains of roasted veggies with garlic and herbs so I wanted to do a few batches and put them aside in aluminium containers, but will they freeze okay?
