    stuffing - how do I make it?

    Can someone tell me how to make stuffing for roast chickens. I don't like it so I never listened when Mum told me but DH likes it so now I want to make some.
    Are there lots of different recipes or is it all pretty much the same?
    If there are lots of recipes please share yours.

    Hmmmm i love a good stuffing.

    Mum's best one has apricots in......... i'll go dig up the recipe.

    ETA:

    Dried Apricaot and pine nut stuffing

    1 onion finely chopped
    1 TBS butter
    1/4 C currents
    1/4C pine nuts
    3 thick slices of bread crumbed (As in wizzed in a food processor, stale bread is best. You can use store bought bread crumbs if you want but not as good imo! )
    1/4 - 1/2 C dried apricots chopped and soaked in water
    1 egg beaten

    Cook onion in butter until transparent, add currents and pinenuts and cook until lightly browned. Stir in crumbs and drained apricots. Stir in egg. Season with S & P.
    Stuff!

    I don't know how to make "proper" stuffing (I don't "do" breadcrumbs).

    The few times I have bothered to stuff, I use either rice or couscous, and add all sorts of other yummy things - spices, bacon, onion, garlic, chorizo, herbs, citrus, dried fruit - whatever. Add a good splosh of oil before you pack it in cos that is what carries the flavour.

    Otherwise you could always cheat and get the packet stuff at the supermarket LOL.

    I'm assuming that you're talking pre-cooked rice or cous cous.

    I didn't know it came in a packet - that sounds a bit scary (then again, DH loves KFC so he might think it's delicious).

    Yes precooked. It doesn't stick together like the breadcrummy variety but it's yum.

    There is a cheats stuffing recipe on taste that uses a packet mix plus a few extras. But it's really not that hard.
    Couscous stuffing would be yum MD.

    ANge, your mum's recipe sounds yum! I guess I could always substitute couscous for the bready part.

    Hi guys
    Just wanted to add that the packet stuffing at the supermarket is actually quite good ( Im a simple girl). I add other things to it like garlic, walnuts or pine nuts. Yum!

    I do a really simple one..

    Bread (torn up, not crumbed)
    Onion - finely chopped
    Garlic - 1 clove (crushed)
    Mix herbs
    egg to bind.

    There is really no set amount, just depends on how much you like the taste of the said ingredients..
