That's the cupcake recipe I use too Entreat! They are so fluffy and yum, aren't they? Funnily enough the pumpkin scones were the best ever I made. I will try and find the recipe- I think it was a WW cookbook. And yes, you do have to stand with caramel, and nuts too that you are trying to roast ie pine nuts. I am doing a zucchini slice this afternoon...

I did a very dull Tuna Mornay today... I'd rather be baking cupcakes & slices!! But they make such an inappropriate lunch.
