    Urgent Help - Dolly Varden Cake!

    Ok so I need to make this style of cake for Gaby's birthday party tomorrow. This morning, using the appropriate cake tin and following the instructions I made the cake. After the appropriate cooking time it appeared cooked (skewer came back clean and was very brown on top) so I removed and let cool. When I got it out of the cake tin, the very bottom the poiniter end was like a pudding, hadnt been cooked through.

    So I started again. Ran down to my local cake decorating/cooking store and got their cake mixture (didnt have time to go to bigger shops and this was closer) and the lady their said to turn the heat down to 150 and let it cook longer, ie 1 1/2 hrs. So I have followed these instructions and this time the cake is all like mush! It is still in the oven but it hasnt cooked through at all and is like a big pudding!! So I have now turned the heat up to 180 and am praying that works out.

    Does anyone have any other suggestions? I dont have time to make a 3rd cake as I have a baby shower to go to this arvo and Gaby is performing in a dancing concert tonight. Please help.

    If it doesn't work, maybe cut off the uncooked part of each cake and put the cooked parts together kwim? The cut them to shape??

    Hey Ang
    DH said the best thing to maybe do would be take the tin to the local bakery and ask if they can make it tonight and you can decorate it tommorrow?
    He said he would have to see the mixture and then try to explain sorry!

    The cake mixes from the cake decorators are best cook long and slow, so if its not cooked I'd just cook it longer. Try not to stress it won't burn at a low temp and the cakes come out more moist at a lower temp than cooked quickly at a high temp for some reason.
