my all time favorite - never go wrong, is Satay chicken stirfry.
Easy as recipe - perfect for those days when you couldnt be stuffed cooking. Actually, not really a recipe, more like -
300 - 440g chicken - diced, sliced whatever
an onion. And cook
When chick almost done, throw in some sweet chilli sauce, stir thru, and a good couple tablespoons of peanut butter. I use low fat smooth. Stir around, and add abit of water to make it more saucy. A dash of soy sauce is good as well
Then i just chuck in capscium & snow peas, and serve with rice.
Works better with chicken then beef.
I am hopeless with receipes, tend to be more of a open the cupboard/fridge, and throw in what ever i feel like, tasting as i go along.
Easy thing is cooking meat, with some chilli, onion and garlic, chuck in some either terraiki sauce, or black bean or something, throw in some noodles and veges and bobs your uncle. Dinner in a flash.
Marinade - tandori sauce with yoghurt, on chicken breast.
Or - for chicken marinade - mix a small amount of water with a packet of french onion soup mix, just enough to make it abit a runny/pasty consistancy. And marainade chicken breasts. Yummo!!!!
