    What can I make with lots of eggs?

    Have nearly a dozen eggs in the fridge that have a best before date in a few days. I know they'll still probably be fine to use after that date, but I just prefer not to...what can I make in the next couple of days that will use them up? We aren't big egg eaters..I don't know what possessed me to buy a dozen of them

    DF isn't a huge quiche fan, but I might make one anyway, or some mini quiches as he loves them, just don't know if I can be bothered mucking around with pastry (even though I use the frozen sheets) at the moment...

    Any other ideas? I'd love to make a chocolate mousse and some meringues to use up the whites, but can't eat raw egg at the moment

    well the mereingues would be cooked - so you can have them...
    some other ideas:

    quiche
    egg custard
    frittata
    zucchini loaf (there is a fab recipe on here that uses 4 eggs)
    french toast
    souffle
    fried rice
    pasta carbonara

    you can also add an egg to lots of things to add a bit of protein...
    like a white/cheese sauce (on pasta or vegies) you can whip an egg through when cooking the sauce
    i often beat an egg through a stir fry or fried rice or even 2 min noodles

    Oooh if you want meringues, you can use the yolks for carbonara...mmmm....

    Egg and bacon pie
    Scrambled eggs
    Baked eggs (Cai if you read this, is your recipe on BB?)
    Cake or muffins or biscuits that use eggs
    Egg sandwiches

    You'll get through them!

    Lots of great suggestions here! I use 4 eggs in a large fruit cake.

    Mayonnaise, Bernaise, Hollandaise, Floating Islands, Souffle (sweet or savoury), Custard Tart, French Toast, Creme Brulee, Croque Madame... ummm...

    I found a fantastic baked dessert which we tried out the other night. It's called blueberry pie, but with the coconut in it, the crust actually comes up like a sweet juicy macaroon, with the custardy bit underneath...YUM! So I'm going to call it macaroon pudding.

    1/3 cup plain flour
    3/4 cup sugar
    1 cup dessicated coconut
    4 eggs, beaten
    2 cups milk
    90g butter, melted
    2 tsps vanilla essence
    1/2 cup fresh/frozen blueberries
    Icing sugar, to decorate

    Place flour sugar coconut in large bowl, make a well.
    Beat eggs, milk, butter and vanilla together.
    Add egg mixture to flour mixture, beat until well combined. (It's very sloppy & I wondered if they printed out the quantities right, but it worked)
    Pour into a greased 23 cm pie dish, sprinkle berries over the top.
    Bake at 180 degrees for about 45 min or until it is golden and set.
    Dust with icing sugar and serve warm.

    I used blackberries which was nice, but I reckon you could use pretty much any fruit - rhubarb, canned cherries, plums, etc. It was *very* sweet so you could add less sugar and still get a nice result, IMO.

    Lol snugglybean. I did see that one...what a feat!! And so many eggs.... Afterwards I felt so much like having profiteroles!
    Made some muffins this afternoon and now only have 6 eggs left...so using them up seems achievable! Thanks for your ideas everyone!
