Help ladies! I have 4 banana's that are very close to death and I don't feel like eating them on their own..... what can I make with almost very very ripe banana's? I REALLY don't like banana bread and can't stomach milk shakes at the moment... I have searched my million cookbooks and (can you believe) there is nothing for banana's other than banana bread.... any ideas?????? DH has banned me from making muffins (apparently I have made a few too many lately)....![]()

Low Fat Banana Oatmeal Cookies
4 dozen
1/2 cup sugar
1/2 cup brown sugar
1 cup fat free margarine
2 egg whites
1 tsp. vanilla extract
2 cups flour
1 tsp. baking soda
1 tsp. ground cloves
1 tsp. cinnamon
3 ripe bananas, mashed
2 cups rolled oats
1 cup miniature semisweet chocolate chips
1/8 tsp. salt
Preheat oven to 375 degrees F.
In a large bowl mix sugars, margarine, vanilla and egg whites. Stir in flour, baking soda, salt, cloves, and cinnamon. Stir into the creamed mixture. Add the mashed bananas, rolled oats and chocolate chips, mix until well blended.
Drop dough by using a rounded teaspoon about 2 inches apart on an un-greased cookie sheet (You can also use an air bake cookie sheet with parchment paper.) You can make the cookies larger but don't forget the fat grams will increase. Bake 8 to 10 minutes or until golden brown

Baked banana slice
3 medium bananas, peeled and sliced
1 cup self-raising flour, sifted
1/2 cup sugar
60g butter
1 egg, beaten
1/3 cup milk
1 tablespoon extra sugar
1 teaspoon grated lemon rind
1/2 teaspoon cinnamon
melted butter for brushing
Compine flour and sugar in bowl, rub in butter.
Add egg and milk, stirring until well blended.
Spread dough evenly in greased 28 x 18cm
lamington tin. Combine extra sugar, lemon rind
and cinnamon, then sprinkle over dough. Arrange
banana on top, brush with melted butter. Bake in
moderate oven for 30 to 35 minutes or until golden
brown. Cut into squares, serve as cake or dessert
with whipped cream or custard.

Someone posted a while ago a Banana and Passionfruit pancakes a while ago ..mmm. I am sure it would be a standard Pancake recipe with Banana and passionfruit added.
Here's three ideas....
Caramel Bananas with Wholemeal Crepes
Crepes:
1/3 cup wholemeal plain flour
1/2 cup plain flour
1/2 cup milk
1/2 cup water
2 eggs
Combine all ingredients in blender or processor until smooth. Stand for 30 minutes. Cook crepes in greased pan, fold into quarters, keep warm. Serve with topping and ice cream.
Topping:
60g butter
1/2 cup coconut
1/2 cup brown sugar
2 tablespoons lemon juice
3 bananas, sliced
Melt butter in pan, add coconut, stir until lightly browned, add brown sugar and lemon juice. Stir until sugar is dissolved. Add bananas and heat through.
Chewy Ginger Banana Cookies (these are really yummy and so easy)
125g butter, chopped
1 teaspoon grated lemon rind
1 cup (200g) firmly packed brown sugar
1 egg yolk
1/3 cup mashed over ripe banana
1/2 cup (60g) chopped walnuts
2 cups plain flour
1 tablespoon ground ginger
1/2 teaspoon bicarb soda
Beat butter, rind, sugar and yolk in small bowl with electric mixer until smooth. Stir in remaining ingredients. Drop rounded teaspoons of mixture about 5cm apart onto greased oven trays. Bake in moderate oven (I found about 220 degrees C) about 12 minutes or until firm. Cool on wire racks.
Adults Only Banana Split
20g butter
Bananas cut into thirds (usually one each, depending on size)
1/4 cup pecans
2 tablespoons brown sugar
2 tablespoons rum
(This one didn't have directions, but I think it would go something like this...) Melt butter, add sugar and stir until dissolved. Add roughly chopped pecans, then bananas and rum. Cook until bananas are soft. Careful rum may catch alight in the pan!!!(not angry, but rather flame in the face) Serve with double cream or ice cream.
There's a couple of ideas for you. They are making me hungry! (Especially the last one)
