Sausage casserole. Fry up some onion and garlic, put a few tins of tomatoes in and a bunch of cut up sausages. Good with either brown rice or mashed potato.

Or you could do something like a cottage pie with mashed potato/cheese on top and a similar tomatoey base underneath.

Or just freeze whole sausages and he can have sausage sandwiches for lunch.

    Congrats on your engagement.

I second the sausage casserole idea!

Also, I sometimes slice them into rings and freeze individual portions, which can then be added to leafy/vegetable salads to get some protein. One of my DPs favourite salad-as-a-meal lunches is sausage, cubed roasted sweet potato or pumpkin(also freezes well) and fresh baby spinach, with a little bit of dressing and a sprinkle of pepitas (pumpkin seeds).

Little rings of sausage are also good added to potato salads.

    Thanks for the suggestions!!

I have decided to make a sausage casserole for DF and also make a sausage pasta thing to go with a salad for dinner tonight lol - and then I will freeze any that are left over to decide for next time

    Thanks again xx

    Sausage Pasta bake,

Packet of pasta, 7 or 8 sausages, bottle of tomato pasta sauce, some mixed herbs. Mix together & put in baking dish, top with grated cheese & bake for 20 mins. This makes heaps & we often have enough for leftovers for lunch for 2 days for 2 people when we have this for dinner. Even DS eats this one.
