My go to quick lunch is equal parts cooked couscous and chopped baby spinach leaves, some crumbled feta and lime juice squeezed in to taste.
Another is cooled pasta, pesto, capsicum, sundried tomato and parmesan.
Both can be adapted in a bunch of ways and are very quick. They can also be made in advance and are popular with my kids, similar ages.
In cooler months we make big pots of soup on the weekend to be reheated during the week.
