    Hahaha Tuesday night = lazy night!

    Last night I made homemade BBQ sauce and marinated chicken and then put it on the BBQ and we ate it with salad.

    Tonight we defrosted some soup for tea. Potato, leek and bacon soup.

    Dinner turned out really good! I was very proud of myself! (And house clean too, I had a panic and called mum cos the boys were being demanding, and we found ants in my cupboards and then River unscrewed the hundreds & thousands lid and made an offering to the ants.)

    Yay for you Nelle! Isn't it wonderful when a meal turns out as well as you hoped! As for River's offering to the ants - Euan does that too. He likes to share his lunch with the ants, and the floor, and the walls... *sigh*. Actually, I think that the ants have realised that they are onto a good thing and have moved in permanently.

    Um, could I have both the chicken and roast vegie salad recipes please? Or is that pushing the friendship to ask for both?

    Lisa - I hate commercial pizzas too - but our local Eagle Boys makes a half decent crap pizza, in that the ingredients are all recognisable and they are assembled on the pizza in a way that is slightly less haphazard than the usual fare. For $5 they're pretty good; they are better than the 'gourmet' pizza place up the road which charges four times the price. If we want gourmet pizza we make them ourselves - between DP and I we make a damn fine pizza.

    Honey Almond Chicken
    Really should be called honey soy chicken and it's not fancy but it's DELISH!
    Chicken breasts
    Mix equal parts soy sauce, honey and slivered almonds (recipe says 2tbspn each, but I like it swimming).
    Pour mixture over chicken in oiled pan.
    At 190C for about 30 min.

    Warm Roated Vegetable Salad
    I messed with the quantities, and the orig said capsicum, I used zucchini, and added some other things too.
    - Quarter butternut pumpkin, cut into small pieces
    - 2 large potatoes, cut into small pieces
    - 1 zucchini, cut into pieces
    - 1 onion (I used a red one), cut into eighths
    - whole mushrooms (not huge ones)
    - spinach leaves (I used baby spinach)

    Put your pumpkin and potato in a covered microwave dish and nuke on 100% for 4 mins.
    Mix all vegies (NOT spinach) together and lay them on a large oiled tray.
    (I added rosemary, sesame seeds and pine nuts here)
    Drizzle or spray oil on top.
    Cook at 220C for about 30 mins (will be longer if you cut the vegies biggish).
    Line a salad bowl with the spinach leaves.
    Put the vegies in the bowl.
    Add dressing - equal parts balsamic vinegar and honey, with a bit of olive oil.

    It was pretty darned yum, and went with the chicken well cos that had honey in it too.
    And just cos I'm a good kinda gal, and it's sooo hard to make
    Choc peanut sauce
    mix 2 Snickers bars and 1/2 cup cream in saucepan until all melted, and reduce slightly to thicken.
    Pour on ice-cream.

    Pasta with chicken, mushroom, leek and white wine cream sauce. It was a 'oh shoot, it's 8:00 and I'm completely disorganised but don't feel like tinned soup' quicky dinner using the ingredients I'd got for something that was going to go in the slow cooker but didn't quite make it there.

    Noice Suse!! My quicky dinner like that is mexican. I'm going to have to start freezing my own batches of beans again to get through it.

    I might go get some fresh bread rolls later on and make hamburgers. Because I bought two lots of burger patties and I don't want to eat them two nights in a row, so we'll have some tonight and then again on Monday night. (Fried rice and pork chops on the nights in between!)

    ^ Yum I had my first experiment with yeast the other night making home-made pizza dough, it was heaps easier than I anticipated and turned out great!!
    Turkish bread is just as good though! I used to make mini-pizzas on pita bread bases but our local Woolworths was selling mouldy pita bread so I stopped buying it because I couldn't get anything without green and black fuzz

    Oooh, that sounds good Christy. My mum and aunty and coming up from Melbourne next week and I am getting a butterflied leg of lamb, I've got this wonderful Greek spice blend (from Herbies in Rozelle) to marinate it in, and I do it on the barbecue with haloumi, potatoes, tzaziki and Greek salad. Or middle-eastern with hummus and couscous salad. I'm just rediscovering lamb and it's so wonderful.

    Yeah we have lamb a few times a week now. We had marinated lamb in rosemary, lemon and garlic and popped it on kebab sticks alternated with haloumi on the BBQ and then served with lemon garlic potatoes and spinach salad... yummo!

    So tonight, I'm doing a balsamic marinade with the lamb and then grilled and served over salad.

    Right, you've inspired me Christy! Lamb and haloumi kebabs sound fabbo. Out of curiosity, what cut of lamb do you use for kebabs?
