    Tonight we are having my DH's absolute favourite: Mushroom, chrorizo and paremesan risotto I am making a massive trough of the stuff so he has lunch for work for the rest of the week! x

    We are having soup too MG.

    Ours is barley & veg with a can of tomato soup chucked in. I have added about 5 diff. herbs and 7types of veggies so should be yum. I might serve DD's over rice to chunk it up a bit so she can manage it. She is 15months and wanting to feed herself but not very proficient with a spoon.

    Rissoto sounds yum. I do one with pumpkin, mushroom, asparagus and lentils in it.... might have that later in the week.

    Tonight is Cauli Rice Risotto, made with Chicken, Bacon, sliced asparagus and mushies

    Nomnoms. I'm supposed to be baking easter egg cookies atm but I'm slothing instead. Had a big cleaning day and just feel like resting. So I might make those for dessert.

    But I also might light a fire and have smores for dessert instead... decisions decisions.

    I have just had a look around and realised that we can post a link to our personal blog. If I have it wrong, then please feel free to remove it, mods

    Wild Mushroom, Bacon and Pine Nut Risotto Recipe

    The above is the original recipe. Here are my notes and substitutions:

    I substitute the bacon with 2 or 3 chorizo sausages. Cut each sausage lengthways into quarters and then slice them (so you end up with small bits). Fry the sausage, but reserve the fat that boils out of them (yes, I know, very cardiac-friendly!). Pour this fat onto the onions before you start frying them as it adds some great flavour to the dish.

    The reason why I leave out the pine-nuts is that because of DH's mild tree-nut allergy I can't have any nuts during pregnancy. Trust me, you need the pine-nuts!! I can't wait until I can make it with them again!

    Also, to save a bit of money, I use regular dried mushies from the Asian section in Coles instead of the Porcini mushrooms that are worth their weight in gold. I think they are just fine

    Choc Fudge cream brownie! for hubby and kid.

    Lasagna tonight.

    I grate carrot, cellery, mushrooms, eggplant, zuccini into the meat sauce to bulk it up and get the vegie quota happening...
    Home grown eggplant, tomatoes and basil in it so I feel super satisfied
    I make assemble it in the morning and let it sit all day and cook it later.

    Sazzafrazz,

    When I make lasagne, I steam carrot, pumpkin, zucchini, brocolli & cauliflower then when they're all cooked I puree them and add them to the sauce. I feel so much less guilty making lasagne that way and it is difficult to tell there are lots of vegies in the sauce.
