    Whats for dinner?

    We're having Buffalo wings and cheesy potato skins and salad... YUM YUM!

    Now the buffalo wing seasoning is a packet mix so I can't claim that one

    But the potato skins, I'll nuke the potatoes (4) in the microwave for about 8 or so minutes then allow to rest in foil for 5 mins. Then once its cooled down I'll scoop out the insides to leave a little potato skin boat. Then I'll fill the skin with my pancetta mix (flat pancetta fried cooked with an onion) and then topped with cheddar cheese and baked in an oven. Potato skins are tricky coz they are basically triple baked but they are worth it

    I microwave them (make sure you have stabbed them with a fork and washed them. Place them around the outside of the plate in the microwave and nuke at 100% the ratio is 3.5 mins per potato adding 1.5 mins for every potato after that. After that take them out and wrap them individually in foil and let sit for 5 mins this completes the cooking process without drying them out. Then cut in half once cooled and scoop out middles. Then I turn them all over skin side up on a baking tray lined with paper and spray with olive oil spray. Then cook in a hot oven (200-2500 for about 20 mins (until skin is crispy), then fill with cheese & pancetta mix and cook for another 25 mins.

    So yeah thats our dinner, serve the skins with sour cream and spring onions and the buffalo wings with ranch dressing.

    YUM YUM YUM! And this is such a blokes meal, I told Marc I was cooking this and he was so excited he nearly jumped through the phone... now all he'll want is a beer to wash it all down.

    Beef casserole with creamy mash and steamed greens. Made the casserole last night in the SC and the mash is last night left over. DH took the sausage casserole I made last night for dinner tonight at work so it is just me!! Oscar is booby as well

    On tonight's menu is Corned Beef Stew with carrots, potatoes and mushrooms, served with Pork Chops crumbed with corn flakes My family's favourite meal by far!

    Chicken and corn soup to start and spinich and ricotta canneloni after that but I jusst realised I forgot to but ricotta so now it's a culinary emergency lol.

    Oh forgot to mention kids are having cheats fried rice for tea. Rice o Riso (only a hint of the seasoning as I think its too salty for kids) with some peas & corn, splash of maggi sauce, drop of sesame oil, some leftover turkey meat and an egg whisked in when hot to give the omlette feel They love it and its reasonably healthy and quick!

    ETA: buffalo wings are too hot for them... and daddy is home late so want them fed first

    Dh and the kids had marinated plum pork ribs with potato bake and salad... and cherry ripe cheesecake for dessert.
    I'm having garlic and chilli crumbed chicken with salad... with stewed apple for dessert.
