    What are you baking this weekend?

    Time to restock the freezer in our place

    So yesterday I baked bacon and herb muffins.

    Over the weekend I'm making raspberry and coconut loaf, banana and coconut bread, apple muffins, raspberry and white choc muffins, brioche and maybe some crumpets.

    So what are you baking this weekend?

    Nothing...I am too busy packing my things to move to your house!!!!!

    Actually, I am experimenting with some low gi recipes

    Wow, that's impressive! I tend to space my baking out because we don't have much freezer space and there's only three of us, so things last ages... I already have carrot, pumpkin, zucchini and apple muffins in the freezer but was going to do some pancakes/pikelets (not really baking, but it still counts, doesn't it?), maybe a zucchini slice and some oatmeal cookies or a peach and pear loaf early next week.

    Nothingtolose - let me know if you try anything good, I try to eat low GI as much as I can. I love the fruitastic slice from Annette Syme's 'Symply too good to be True #4'.

    I'm thinking of baking some whoopie pies. I'm thinking cranberry with white chocolate filling. As we're on a diet, neither of us will eat many, so I might give them away.

    Otherwise, I keep meaning to try a new GF artisan bread recipe but it intimidates me with all the steps required.

    N2L I was just thinking the same thing!

    I was thinking of making muffins too to freeze, nice and easy to defrost and heat up for the kiddies as snacks!

    The brioche is scaring me, I'm usually fine trying new things but for some reason I have zero confidence this time.

    I'm also religiously reading your THX posts (soooo close to ordering one )
