Pesto and ricotta sauce on pasta is our go to dish, ready in 5 minutes. Just mix pesto, ricotta, salt and pepper for the most delicious pasta sauce and you're done.
Thanks so much ladies!!! I'm thinking I am going to google some ommelette dishes now. I'm 'trying' very hard to be quite savvy in the kitchen. I really enjoy cooking & trying out new things. Some of you mentioned tomato soup in a can - oh how I miss this!!! We can't seem to get it here. I love tomato soup in a can. Others have said shop bought barbecue chickens. Oh my mouth is literally watering. I could get a barbecue chicken here - they do sell them. But they come complete with feet & head & i just CAN'T take care of this myself. Big wuss I know but I just can't do it.
My girls favourite dish here is duck. Either duck with orange sauce, or crispy skin duck or noodles with duck. Duck is more readily available than chicken here & I'm not a fan of the meat itself & we used to have pet ducks as children & I just can't fathom eating duck. Also, majority of the time it comes complete with the head & it just sends me over the edge. Literally puts me off my food. Sorry. Oh I should add that duck is a definitely a dish we only order in a restaurant. I wouldn't be able to cook it at home. I would be in tears I think! lol

I make a really delicious zucchini slice which is basically a quiche anyhoo.
The other night I made a carrot slice that is carrot, zucchini, ham, eggs, cheese plus a few other things. Eat on it's own or have with chips/salad/veggies! I make it all the time
I don't have a recipe for it, but basically I dice up some pumpkin into small pieces and fry it with some garlic - sometimes I also fry finely diced onion too, it depends on my mood. When it is cooked I add it too the whisked eggs and crumble in some fetta. I often use 2 different types of fetta - danish & australian or greek - but it is fine with just one type. I make sure there are chunks of fetta too as I love fetta! I then add some grated cheese and pour it into the base and cook. Your don't have to add the grated cheese if you don't want to.
