For something quick & simple, tomato soup (from a can) with toast..my DF doesn't like it though as it's not "chunky" enough
Uhm..other things, I know they aren't exactly meals but you can always have a big bowl of icecream for dessert to fill you up! Lol
Scrambled eggs on toast, a quiche- doesn't take long to mix all the ingredients together and whack in the oven, do you have any frozen foods in the freezer that you can just pop in the oven? Like frozen fish, or even party pies/sausage rolls...not a healthy dinner but hey it's better than nothing.
always things in the freezer for CBF days! fish, chicken, those frozen spuds that you just cook on a tray....
eggs are a good alternative - quiche/omelette/scramble is good.
nachos
chunky tin soups
toasted sangas
i have many many CBF nights when DH is at work so we usually have all this stuff so that i can at least eat. it's not as good as meat and veg with DH when he's home, but it feeds me...
when Im not in the mood for cooking but to lazy to get take away I make impossible pie (thats what my mum called it). A few eggs, cheese, bacon bits, random vegies abd some milk and pastry mix from a box. Put it in the oven dinner in about 45 mins
My DH just drove to Macca's poor man.... he travels 1.5hrs to work (gone 7am-7pm) and I usually have dinner ready for him but I just couldn't do it today!
I second the chook from the supermarket, usually with some salads from the deli with some chips I cook in the oven.
Or my cheat stirfry, I always keep a pack of frozen stir fry vegies in freezer and a pack of hokkien noodles in the freezer also, toss vegies in wok or pan, thaw noodles by putting in bowl and pouring boiling water over the top. I add some garlic to the vegies and some sweet chilli sauce, once its all cooked (couple of minutes) and noodles thawed I drain them and put them in the wok or pan with the vegies and toss around so that everything is covered in sauce and then its ready to serve. This seriously does not even take ten minutes its healthy yummy and filling.
If you have a bit more energy I add usually add some diced chicken or beef strips. Even prawns would go well. Sometimes I also buy the frozen stir fry vegies that have the sauce sachet in it like the honey soy pack, I still add the sweet chilli sauce so it ends up being honey soy and sweet chilli stir fry.
Story of my life at the moment! Tonight I had cereal with dried fruit. It's so cold but I can't stand the thought of hot food!
Baked beans on toast. Every time - especially if there's home made beans left over!
Pasta with cream cheese, spinach and peas (I always have peas and spinach in the freezer - just cook the pasta and stir everything else through)
Leftovers wrapped in puff pastry.
pizza...that's what we're having tonight, squizzle some tomato paste on, sprinkly some pre grated mozzarella, toss on some ham and tomato, more cheese, oven. Easy!
Jacket potato (done in the microwave) with baked beans/cheese OR tuna/mayo/sweetcorn OR chicken/mayo/sweetcorn.
Or tuna pesto pasta. Cook pasta and drain. Into same pot flake some tinned tuna and add pesto. Then tip pasta in and mix. Yummiest quickest meal ever and done in one pot.
I always have meals that I've cooked up frozen in tupperware bowls, then I just wack them out of the freezer and into the microwave, dinner is done in 5 minutes
