Obviously too late but I like roast veg and chorizo cous cous.

Grill 2 chorizo sausages in a grill pan and set aside.
Meanwhile bake 1 cubed potato, some cubed sweet potato, cubed pumpkin, cubed carrot and some halved mushrooms for around 35mins or until done.

Cook cous cous and place in bowl with other ingredients. Add some crumbled fetta, 2 handfuls of baby spinach or rocket and a drizzle of balsamic vinager and olive oil. Yummo.
