    Yummy salad ideas

    I need to start eating more fresh foods! I'm not a huge salad fan but they are quick and easy, so please give me some yummy salad ideas!!

    This is one that I just threw together one night and was very yummy.

    Dice up some chicken and bacon. Toss chicken in some kind of seasoning (I just had some French Onion soup mix, so put it in that). Cook chicken and bacon together, put aside to cool down. Then I just threw together whatever I had in the crisper - lettuce, baby spinach, tomatoes, snow peas, carrot, capsicum, cucumber, pineapple, grapes, spanish onion and olives are the usual things I have on hand.

    When I am really short of time - a bag of baby spinach / lettuce mix then go the deli in Woolies and get a tub of their fetta / semi dried toms mix. Toss it all together with some olives (if you like) and diced cucumber. Also nice with just the spinach, fetta and semi dried toms.

    My DH makes a really nice one, it's oranges (peeled and cut into bit size pieces), shreded coconut and a little ranch dressing, it's nice and refreshing.

    I found one from the Taste website, it's pumpkin and spinach salad, roast up some butternut pumpkin (cover in olive oil and honey), once it's cooked sprinkle with sesame seeds and cook until they are toasted. Let pumpkin cool, dry toast some pinenuts, then the pumpkin, baby spinach and pinenuts into a bowl. This is the dressing for it 1tbs lemon juice, 1tbs honey, 2tbs extra virgin olive oil, 2 tsp wholegrain mustard, shake it altogether. It's really nice.

    oh ive had a few over christmas

    First the rice salad! it yum!
    Matrimonial rice salad

    Ingredient:

    1 Cup of brown rice, washed
    3/4 cup of soy sauce or tamari
    1/2 onions (finely chopped)

    1 cup of each: sunflower seeds, pumpkin seeds, sesame seeds (dry fry)
    1 cup red capsicums (finely chopped)
    1 cup of sultanas
    3 tbsp spring onion (finely chopped)

    Dressing:
    ? cup good olive oil or pumpkin seed oil
    2 tbsp lemon juice
    1 tsp lemon rind
    1 clove of garlic crushed
    1 tsp of honey
    1 tsp of grated fresh ginger


    • cook rice, place in bowl, add raw onion and soy sauce, leave to cool
    • add capsicum, sultanas, spring onion and seeds

    • Add dressing just before serving


    * can also add diced cucumber just before

    chicken tenderloins crumbed n baked in oven or frypan, cooked diced bacon, mixed lettuce, carrot cheese, grape tomatos, cubed potatoes baked, and avocado!
    then add paul newmans ranch dressing mmm yum df always asks 4 this 4 dinner cuz its so full of meat n spuds jus wat men like! try it im throwing it 2gether 2nyt!

    This is really nice - I don't use the sesame seeds but it is a big hit when we need to take a salad places!!

    Eggy noodle salad

    Serves 4

    Dried Egg Noodles 200g
    200g ham
    1 cucumber, peeled
    4 eggs
    4 leaves lettuce, 5mm slices
    3 tablespoon Light Soy Sauce
    2 tablespoon balsamic/wine/rice vinegar
    2 teaspoon Sesame Oil
    2 green onions, finely sliced diagonally

    Mix soy sauce, vinegar and sesame oil in a bowl.

    Beat the eggs in a bowl, cook it as thin omelette, slice 5mm wide after cooled.

    Cut cucumber in 4 lengthwise, then slice thinly.

    Slice the ham thinly into strips.

    Cook the noodles in rapid boiling water for 3 minutes and dunk into large bowl of ice cubes and water, stir until noodles cooled, then drain.

    Place noodles in each serving bowl, place the egg, ham, cucumber and lettuce on top. Sprinkle with 2-3 teaspoon of the dressing. Garnish with green onion and serve. Mix well before eating. Sometimes instead of the ham, I use shredded barbequed chicken.
    Salad can be prepared few hours ahead of time with dressing kept in separate bowl.

    Crunchy noodle salad

    Serves 4

    1 pkt Crunchy Noodles
    1 Chinese cabbage shredded
    6 shallots (chopped)
    100g Roasted slivered almonds or pine nuts

    Dressing

    1/4 cup white vinegar
    1/4 cup castor sugar
    1 tbsp soy sauce
    2 tbsp sesame oil
    1/2 cup olive oil

    What you do:

    Except for the noodles, combine all salad ingredients in a large bowl.
    Combine all dressing ingredients in a saucepan and stir over low heat until the sugar is dissolved. Set aside to cool.
    Add dressing to salad and mix well. Just before serving toss through the noodles.
    To turn this salad into a meal you can add some chicken, or bbq'd pork.

    Tuna and potato salad

    8-10 Baby potatoes
    3 tbsp whole egg mayonnaise
    1/2 cup corn kernals
    1/2 cup peas
    1 carrot grated
    1 tin of tuna in springwater

    Boil the potatoes until just tender. Set aside to cool. Once cooled, mix all ingredients in a large bowl and serve.
    I sometimes add a couple of boiled eggs too.

    We did this for dinner last night because it was soooo hot and gross and we didnt' feel like eating a heavy meal

    Couple of medium sized chicken breasts, slice them and fry up in some olive oil until cooked and golden. Keep warm and put aside.
    Lettuce mix
    sliced/cherry tomatoes
    sliced cucumber
    sliced avocado
    sliced red onion
    1 pkt of Chang's fried noodles
    Neil Perry Soy and Sesame Dressing (in the fruit and veg section at Woolworths).

    Put the chicken and salad stuff in a bowl and mix with dressing to taste. Top with crunchy noodles.

    Very easy and very yum
