    Yumo vego lasagna...so easy

    Quick and easy for yummy mummies

    I use fresh organic pasta sheets, but non organic work just as well...fresh is best tho u can use the dry packet sheets too

    1/2 onion
    2 gloves garlic
    1 packet baby spinach leaves
    1 tin canellenni beans (again I use organic)
    1 large jar tomatoe puree or 2 tins diced tomatoes
    some water
    fresh lasagna sheets
    salt and pepper
    grated cheese to top (as much as you like )

    saute onions and garlic, add beans cook for a minute or so, then spinach and cook till wilted. Add tomatoes, salt and pepper. Add enough water so you have a medium consistency so it plops easily off the spoon, as it needs enough moisture as the beans cook and so the lasagna isnt dry . Simmer for about 30mins to let all flavors combine mmm and then construct.

    cover with baking paper and then foil and cook (about 180) for about 25ish minutes, take off the cover and cook for another 5-10mins

    i made this one up, so all the measurements are kind of chuck it in and see , and cooking time varies slightly

    Ohhhh my mum makes one like this but layers eggplant under the pasta just to give it extra body!!
