    zucchini slice

    Anyone have a good zucchini slice recipe? Been craving it for awhile and have never made it before.

    Yeap I love this one!!!

    160o fan Forced Over for 40-45minutes

    1 Zucchnini
    1 Onion
    1 Carrot
    All grated or just finely chop the onion)
    1 Rasher of bacon
    1 cup of grated cheese
    1 cup of SR flour
    1/2 cup oil
    5 eggs
    salt and pepper to taste

    Grate zucchini, carrot and cheese
    Dice Onion and Bacon
    Mix all ingredients in together
    Place in a rectangle Pyrex dish or similar, place in over for 40-45min @ 160 degrees.

    Delicious hot or cold

    This is the one I make.... Not much different to Beema's.

    Had to re-type it, as it disappeared off my computer....

    Zucchini Slice

    350g zucchinis, grated
    1 onion, finely chopped
    3 rashers bacon, chopped
    1 cup cheese, grated
    1/4 cup butter, melted
    1 cup self raising flour
    4 eggs, beaten
    salt and pepper
    1/2 cup grated carrot
    1 tblsp oil

    Gently saute onions and bacon in the oil.
    Add the zucchini and grated cheese. Combine with flour, eggs, butter and seasonings.
    Place into a 22cm greased baking dish, cover with foil and cook for 30-40 minutes at 190 (170 fan forced).
    Cut into wedges and serve warm or cold.

    That is the one I use It's yummo!!

    Except I use 100gm of diced bacon pieces from the deli and 1/4 cup oil
