Easter Brunch - any ideas?

OK, so hot cross buns, check.

Was thinking something like individual bacon & egg pies? but putting shortcrust into muffin tins to blind bake, then layering bacon, baked beans & topping with an egg? Would that work do y'think?

Anything else that's traditionally eastery? The only other easter recipe I have are for extreme brownies...

You can do a similar thing with little ramekins, where you chuck whatever you want into the ramekins (bacon, ham, chorizo, or prosciutto with cherry tomatoes, cubed pumpkin, whole baby mushrooms, etc) then bake it in the oven, then you just crack your eggs into the ramekins, sprinkle a bit of whatever fancy cheese you want (parmesan, tasty cheddar, provolone, feta, whatever) or herbs, then back into the oven for a couple of minutes, you serve a ramekin on the plate for each person with fancy toast on the side. Yum.
