Smoked Leg Ham (usually served cold with prawns as entree)
Roast Turkey w/turkey gravy & cranberry sauce

    Roast Pork w/apple sauce
    Roast spuds
    Creamy mash
    Gingerbread
    Apricot Balls
    Rum Balls
Royale Puddings (The kids make these every year with Royale cookies, white choc, mint leaves & jaffas)
Haighs Chocolate Puddings (I must get DH to get me some tomorrow!)
    Shortbread
    Candycanes
    Chocolate Money
    Christmas M&M's
    Fudge
    Truffles (chocolate kind)
    Trifle
    Xmas Pudding
    Prawns
Croissant Creme Brulee Pudding (it's like bread and butter pudding but more amazing... we have this for breakky on xmas day as it can be fridged night before and just gets put straight into the oven in the morning)
Ham & Cheese mini Croissants (with leftover ham) for breakky with champers on boxing day...

And most importantly... whilst it's a beverage it is extremely important...

It's uncooked, and not safe for PG women... but you can cook it but I never do because it's a right PITA.

    Eggnog - Makes 6-7 cups

    4 egg yolks
⅓ cup sugar, plus 1 tablespoon
    500ml milk
    1 cup heavy cream
White Rum (as much or as little as you like - we normally do a cup for this recipe as it's meant to serve 6-7 small cups... but you can do less or none at all)
    1 teaspoon freshly grated nutmeg
    4 egg whites*

Using a mixer, beat the egg yolks until they are pale. Gradually add the 1/3 cup sugar and continue to beat until it is completely dissolved and yolks are thick. Add the milk, cream, rum and nutmeg and stir to combine.

Beat egg whites to soft peaks. With the mixer still running gradually add the 1 tablespoon of sugar and beat until stiff peaks form.

Whisk the egg whites into the mixture. Chill and serve.
You may find once it sits that you end up with a pillow of gorgeous froth on top but a few stirs and it reincorporates and is velvety smooth.

I can't believe I'm giving away all my secrets tonight
