    What to do with leftover cake?

    I made filled cupcakes yesterday & now have a bowl full of left over cake that I scooped out. Sooo what should I do with it? I'd love to make Bakerella cupcake pops, but don't have the sticks etc and really can't be bothered going hunting today Any ideas?

    Soften some vanilla ice cream, stir the cakey bits through it, then mould and re-freeze into a cakey-ice-creamy-cake. Remove from mould using warm cloth, then sprinkle with chocolate shavings.

    Or trifle.

    Or, you could let it go stale and make a bread and butter pudding.

    Ditto! Caught my attention I'd do a Trifle! YUM! Ah, if I could refrain from gobbling it all up before any of it made it into the bowl.... For this reason, DH and I have only ever had my homemade trifle for dessert once..

    i'd probably freeze it with the intention of making something else but i wouls more than likely end up just eating it as is.

    The ice-cream idea sounds yummy

    It's all crumbs, so not really trifle material, but I do like the ice cream idea. Thanks for that one, I'm going to do it

    I have a recipe somewhere for truffles and you use Madiera cake for the centre and some other stuff but you could probably use the cake you have got. They are so yummy. Let me know if you are interested and I will try and find it. I made it for xmas gifts one year but between my Dh and the man next door they were all eaten. so was the second batch.

    Banana Cream Cheese Desert
    Cake crumbs, 8 ox. cream cheese softened, 14 oz. sweetened condensed milk (not plain canned milk), 1 tsp. vanilla, 1/3 c. lemon juice, 4 medium bananas sliced and dipped in lemon juice

    Line bottom of a 9" pie pan with enough cake crumbs to cover completely. Beat cream cheese until fluffy. Beat in sweetened, condensed milk until smooth. Stir in lemon juice and vanilla. Line the cake crumb crust with 1/2 of the banana slices and top with cream cheese mixture. Top with remaining banana slices. Cover and chill three hours.
    YUM!

    I'm still trying to figure out what "leftover cake" is. I've heard of sponge cake, chocolate cake, fruit cake, banana cake, coffee cake... but leftover cake? What do you put in that?

    Or is it this mythical thing like "leftover wine" and "leftover chocolate" that recipes seem to think exists but I've never been able to find in the shops? I hate this "leftover" brand because they all use it and I can't find it!
