You can make a traditional one with mixed herbs, fresh breadcrumbs, seasoning, onion and egg.
I have recently been making one similar to the above and putting in diced dried apricots - sundried tomatoes are also nice.
Sage, onion are also a nice combo with chicken.
As are lemons.
Yeah, just make it up as you go along. I love to (well, when I ate chook) use the Woolies' four seed bread with whatever else - sage and lemon juice was a favourite.
Breadcrumbs, macadamias and lemon myrtle make a nice aussie stuffing.
Fresh orange juice, a bit of rind, pepper, coriander and cardamom make a nice spiced stuffing (you can also then put orange slices between the skin and the breast, keeps it super moist)

Huge pile of caramelised onions
Big bunch of fresh herbs
Oh, and student special - ripped up cheap bread (whatever the bakery will give you for 35c) salt, pepper, and a slosh of your favourite goon (aka cask wine, for the cultured)
The options are endless. You can't really go wrong!
