    Best Ever Meatloaf

    Okay, so I am a fan of meatloaf but yet to find a fantasmo recipe, so hit me with your best ever meatloaf recipe.

    My friend makes the most delish meat loaf. I'll find the recipe......back in a few

    Here it is

    INGREDIENTS

    500g minced beef
    ½ cup dry breadcrumbs
    1 onion, finely chopped
    1 tablespoon finely chopped parsley
    1 teaspoon curry powder
    1 egg, lightly beaten
    ¼ cup water
    ¼ cup milk

    Barbecue sauce
    ½ cup water
    ½ cup tomato sauce
    ½ cup Worcestershire sauce
    ¼ cup brown sugar
    2 tablespoons lemon juice
    2 tablespoons white vinegar
    30g butter
    1 teaspoon instant coffee

    METHOD

    1. Preheat oven to moderate, 180C. Lightly grease a baking dish.

    2. In a large bowl, combine mince, breadcrumbs, onion, parsley and curry powder. Add egg, water and milk. Season to taste. Mix together until well combined.

    3. Shape meat mixture into a 10 x 20cm loaf. Place in prepared dish. Bake for 30 minutes. Remove from oven. Pour off and discard fat.

    4. Barbecue. Put all ingredients in a medium saucepan. Bring to the boil, stirring. Reduce heat and simmer for 5 minutes.

    5. Pour sauce over loaf. Bake for a further 40-45 minutes, basting frequently with sauce. Serve sliced, hot or cold, with salad and chips.

    That is delicious that recipe Tinks. I make it all the time. When we were kids, mum would double the sauce because we loved it so much, and now when i make it for my family I double the sauce as well and we pour it over the vegies.

    1 tsp instant coffee...LOL sounds like a "secret ingredient" to me!

    I've been searching for the perfect meatloaf since forever so I'm gonna give this one a go!

    This sounds good. I've been looking for a meatloaf recipe but nothing has really appealed. I'll give it a go this week I think!

    sounds delicious but if your in a hurry and want a cheats one buy a continetal meat loaf mix and folloe the recipe had this last night it was delicious.....and my 3 yr old even ate it

    That is the exact recipe I use, only I also grate carrot into my meat. The sauce is always a hit. My DS1 always requests extra sauce.

    That is a good one Tinks..really yummy.

    Here is one I make from the Cookery The Australian Way cook book. My DH always thought Meat Loaf was pretty ordinary, then I made him this and he loves it. Has in sandwhiches the next day

    Serves: 4
    Cooking Time: 1.5hrs
    Cooking Utensil : greased log pan
    Oven Temp: 180c

    Ingredients

    250g minced meat
    250g sausauge meat
    1/2 cup bread crumbs
    1 tsp salt
    6 shakes pepper
    1/4 tsp basil
    1/8 tsp thyme
    3 shakes nutmeg
    1 onion, finely chopped
    1 egg, beaten
    1 quantity brown gravy

    Method

    Set oven at 180
    Place all ingredients except Brown Gravy in a bowl and mix well
    Shape into loaf or place in log pan
    Bake at 180c fro 1.5hrs
    Make Brown Gravy

    You can also add 125g chopped bacon for a Meat Loaf with Bacon

    Or for a Fruity Meat Loaf add 1 graged apple and 2 tblsp sultanas.

    Brown Gravy

    Utensil: Baking dish in which the meat has been cooked

    2 tblsp fat left in baking dish
    3 tblsp flour
    2 cups stock or vegetable water
    3 shakes pepper

    Add flour to fat and stir until blended
    stir over low heat unitl roux is brown
    remove from heat and add liquid gradually stirring until smooth
    bring to boil then simme 1-2 minutes stirring continuously
    flavour and serve very hot in gravy jug.
