    Question Pikelets?

    Ok this may sound stupid but I dont' have a recipe for pikelets - and the ones on Taste just seem a bit over the top for me, I can't seem to find just a plain and simple pikelet recipe.

    So does anyone have a "no fail" recipe for me? I'd love to add in choc chips as well (getting rid of sweet stuff before diet challenge next week, plus the kids are sick, so thought it might cheer them up a bit!)

    So yes - anyone? Remember has to be SUPER easy cos its me doing it.

    Do you have a good recipe for fluffy pancakes? I just make pikelets form leftover pancake mix... maybe I'm crazy?

    1C SR Flour
    Pinch Salt
    1/4tsp Bicarb
    2tbs Sugar
    1 Egg
    1/2C Milk
    Butter to grease pan

    Sift dry ingedients, then add the wet, if its too thick add more milk

    Thats how mummy taught me! Lol.

    Now i want pikelets haha

    I've never known the difference between pikelets and pancakes. I have a yummy pancake recipe, and just found this really easy pikelet recipe for you:

    Ingredients:
    1 cup (150g) self-raising flour
    1 tbs caster sugar
    3/4 cup (185ml) milk
    1 egg
    Melted butter, to brush, plus extra knobs to serve


    Method:
    1. Sift flour and sugar together into a bowl with a pinch of salt.
    2. Whisk milk and egg together, then add to dry ingredients, whisking until smooth.
    3. Heat a non-stick frypan over medium heat and brush with a little melted butter. Drop level tablespoonfuls of the mixture into the pan and cook for half a minute or until bubbles appear on the surface.
    4. Turn over and cook other side for 1 minute until golden.
    5. Allow to cool and serve with butter
    That is really easy.
    ETA: ammaki that's very similar to my pancake recipe, except I use buttermilk instead of milk.

    I have a simple one

    1 cup SR flour
    pinch salt
    pinch nutmeg (optional)
    1/4 cup sugar
    1gg
    1/2 cup milk
    1 tablespoon butter, melted

    Sift dry ingredients. Beat egg and sugar. Add melted butter and milk. Stir in dry ingredients. Drop spoonful onto a hot greased pan. Turn when brown.

    Thanks guys, I'll see what I have in the pantry -think I'm nearly out of sugar, but have caster sugar so will see how I go.

    I use the one from the CWA cook book for drop scones

    8 Heaped TBS of SR flour
    4 Flat tbs of sugar ( I think 4 is a little many and only use a couple)
    2 eggs
    cup of milk

    easy peasy

    Hey Mel, i normally would use a pancake recipe i am pretty sure they are almost the same ,maybe u would need to add more sugar to make them sweeter ? or something to make them extra fluffy.

    I really feel like them now ,i used to eat them a lot as a kid mmmmm

    Mel I use Rouge's recipe always - fabtastic for waffles pancakes or pikelets - it'
    s seriously the easiest and the best.

    ditto to this!!! they arnt as heavy as piklets!!

    my recipe is
    1 cup plain flour
    1 egg
    1 cup of milk

    mix together!

    i then add raspberries or mashed banana etc..

    Well I made some. Man, I so suck at cooking. Burnt the first round, the next round hardly cooked, and the next round didn't cook at all till I turned the pan on really really high....

    I think I should just stick to NOT cooking..

    i make vegie ones for DD (just another way to sneak some vegies in lol) but they are great too if you just leave them out. I found u can add what ever u like to these. Once my facebook lets me into my messages (i sent the recipe to someone on there), ill come back and post it

    ETA -

    1 1/4 cup Self Raising Flour
    2 tablespoons of castor sugar
    185mls milk
    60 grams melted butter (cooled)
    1 egg

    What ever vegies you like..and how ever much you like... I used Zucchini (grated), carrot (grated), brocolli, peas, beans, corn and colliflower.

    Cook your vegies and mix through the batter. I mashed my veiges for Mia, as she she pretty fussy when it comes to eating whole vegies, so i hid them a little more by mashing

    I doubled the mix and made about 24. Glad wrapped and froze them in packs of 2 and when i want them, its just a matter off pulling them out and defrosting and heating them up a little in the microwave.

    I use that recipe that Olive posted all the time . Sometimes I add grated vegies and cheese, sometimes I put fruit on top, depends on what DS wants. Sometimes I do the vegie and cheese thing and that's his dinner

    why oh why did I read this thread...guess what I'm craving now! Lol. Maybe after DD has gone to bed..means more washing up for me but meh..when you have a craving!
