How do you make your borscht soup?

Hi ladies, years ago I made an aswome borscht soup but can't remember what I put in it and don't have the recipe. I'd be making a vegetarian version and I know the one i made years ago didn't have meat in it either. I do remember cooking the beetroot and than grating it and I remember cooking whole tomatoes and than peeling them when soft, chopping and adding to soup along with grated carrot and cabbage. Apart from that I have no idea what to put in it. Any suggestions are welcome or if you'd like to share your secret herbs and spices borscht recipe that would be great

My mum has the easiest cheats recipe (she used to do it the "traditional way" when I was a kid but now she says she's too lazy )

Get a large tin of sliced beetroot and tip the juice into a big pot. Slice all the pieces of beet into skinny fingers and reserve. Add to the pot 1 750ml jar of passata sauce, 2 litres of ready made stock, cued potato, carrot, celery and a tin of baked beans. Simmer until the potato and carrot is tender, add sliced green beans, beetroot slices and a tin of baked beans in tomato sauce and simmer til beans are tender. Done.

It is really easy but tasty! The dish is topped off by serving it with bread and sour cream.
