    Lasagne Recipe - No Wine...

    I've never made lasagne and am wanting to give it a go so googled for recipes and they all seem to have red wine in them. We dont drink wine and i dont particularly want to buy a whole bottle just for 1/2C IYKWIM...

    SO..do any of you lovely BBers have a yummy lasagne recipe that doesnt use wine at all?

    I never use wine in my cooking! I don't drink it so would consider it a waste only buying it for cooking with.

    There is a recipe on the back of the lasagne sheets boxes, I made one recently which used ricotta cheese instead of the bechamel sauce and just a basic beef/tomato sauce. If you look on Taste dot com there is a recipe there somewhere for Savoury Mince, I usually make a batch of that up then the bechamel sauce. You could always just leave out the red wine with the recipes you have found, maybe just add a tiny bit of water or beef stock so you still have the right consistency the flavour just won't have that red wine taste.

    I use a heaped teaspoon of seeded mustard in my spag bol, lasagna and casseroles instead of wine. I found the tip on the internet and it really does add a bit of oomph to the flavour but it doesn't taste mustardy iykwim?

    The only time I use a recipe is for baking, everything else I just make up as I go or change things to suit us.

    If there is a recipe that seems really nice just don't add the wine, you could add chicken or beef stock instead if you wanted or just nothing at al

    At the moment I'm on here avoiding chopping up anything for the lasagne sauce to cook for my husbands b'day lol

    I do quick ones which is basically my bolognese recipe cooked a little more but for his birthday I do the tarted up version.

    Which is

    Carrots, celery, zucchini, onions, garlic sweated down, Italian herbs, salt n pepper, pinch of nutmeg, brown off your mince, maybe a little bacon or italian sausages, cans of chopped tomatoes, bottle of tomato juice or passata, stock!

    It really changes to suit what I have on hand and I add red wine if i have it here, taste's nice with or without it!

    I never use wine in mine... and don't have a fixed recipe either!

    I use about
    600grams a mince
    Can on tomatoes
    Mushrooms
    Othervegies, what ever is going really
    Sometimes a Raguletto Venetcian herbs
    onion or two
    couple of cloves of garlic

    Of course home made white sauce

    Fresh basil on top - yummo!

    Fresh Lasagne sheets from the fridge section, haven't used the boxed ones for years!
    I find that from one packet I can get two large lasagnes. 4 sheets per lasagne, then put what is left in a zip lock bag and freeze, and defrost for next time!

    Good point on only using recipies for baking, might just experiment! I like the sound of all those veggies toomany!

    Awesome tip with the mustard MS - cant tell you how many times ive been turned offa recipe because it has wine in it!!

    I have a lasagne recipe but its pretty basic.

    Another tip along the lines of mustard - I always add a teaspoon of curry powder to my bolognaise sauce. Does the same as mustard, for me it just doesnt taste as good without it

    I'd heard the curry powder tip too Freya. Haven't tried that one yet, mainly cos I'm not sure what sort of curry powder to use....what brand and type do you use?

    I find a few tablespoons of Leggos sundried tomato pesto paste is good for rounding out the meat in lieu of the wine. Stephanie Alexander has an excellent veg lasagna too.

    The Keens one in the orange tin. Isnt massively hot but enough to give it a kick!
