    Hit me with some fancy pants sandwich mixes!

    I'm looking for inspiration for making sandwiches for my 2yo, I'm really not into peanut butter, vegimite or jam and feel the need to make sandwiches more interesting.

    So far I rarely give DD sandys, but have been thinking about habits we have in life and remember I was a white bread and butter girl through and through. We never had much in the way of interesting sandy mixes in our house and I was far from adventorous. I remember when I was a teenager I finally had the guts to try a ham and salad sandwich... fearful was I... but damn, it was really yum! I don't want to have DD like that!

    I remember watching a playschool episode where they made some cool mixes like grated carrot and honey and so far I have been inventive enough to come up with cream cheese and sultanas

    Surely there must be better than that. So hit me, what do you mix up in between your bread???

    Will read this thread with interest, dd lives on vegemite but would love to mix it up a bit! I cut her sandwhiches with a cookie cutter to keep her interested sometimes, then we sing as she eats stars etc.

    Hommus with capsicum is a nice one........ Lacking sleep right now so having a total mental blank.... Will try add more when I have a brain!

    Shredded chicken with mayo, chopped walnuts and black pepper. Sometimes I add sliced cucumber or chop it through the mix
    Egg and mayo is also popular. Just a bit of black pepper rather than curry powder.

    Shredded chicken, mayo, spring onion and parsley wizzed in the food processor into the chunky paste then just spread it on the bread...I usually add some pear (tinned or fresh) and pepper too. DS loves them and so do I

    Tahini and avo is also a hit

    My son loves:

    ham, cheese, & tomato (with mayo)
    bacon, lettuce & tomato
    turkey, avocado, cream cheese, & sprouts
    Peanut butter, honey and banana
    tuna and tomato

    He also loves wraps filled with beans, cheese, avocado, tomato, sour cream and chicken

    We used to do Baba Ganoush and ham or cheese. Or even just Baba Ganoush on it's own.

    Peanut Butter and Tomato is really nice, I know sounds bizarre but it's like chili less satay

    My kids love Cheese & Mayo... don't quite know why...

    Smoked Salmon sandwiches are always a hit here.

    Egg Salad (I use my tupperware hand held choppers for this), add egg, mayo, american mustard, salt, pepper, spring onions and curry powder (just a smidge).

    And don't forget about sushi sandwiches. You roll out the bread with a rolling pin then paint with mayo or whatever dip you like then fill the middle with whatever you like. My son loves Sushi so this goes down a treat.

    Peanut Butter & Banana Sandwiches are YUMMO! And the kids think they are a treat

    My kids love cream cheese (from the jar) and cucumber sandwiches. They also liked meat paste sandwiches when they were younger.

    At work we used to make an easy one which was just shredded chicken, grated cheese, thinly sliced celery mayo and a little bit of mustard. You could put anything in it really, we also did a similar one with tuna.

    Ok, so we love Coleslaw sandwiches. We just grate some carrot, chop some cabbage and springonions (or just buy colslaw mix from the supermarket when we are lazy ), and then mix it up with some low fat mayo and cracked pepper. I usually also add sliced turkey or roast beef or ham to the sandwhich... Yum!

    Another filling we use is coronation chicken! It's ohhh soooo yummo! We shred some chicken, add some low fat mayo (the whole egg one!), some limejuice and mango chutney (secret ingredients ), sultanas if you like them (we don't) and some curry powder (mild!) and cracked pepper. Mix and eat on baguette with grated cheede and lettuce leaves.... *drooooool*
    I usually start off with the mayo and then add the other ingredients bit by bit... that way I can keep adding ingredients, until it tastes just right.

    Cheese and gherkin rocks! My DDs are both die-hard gherkin lovers (I sometimes catch DD1 snacking on them with a fork straight out of the jar)!

    Another one from my childhood - cheese vegemite and celery...you slice the celery into thin c-shapes, trust me is the most underrated sandwich vegetable, it has a perfect crunchy texture. Also works with: peanut butter and celery, cream cheese spread and celery...mmmmmm.

    And latest discovery - ham avocado and alfalfa sprouts. It just works.

    Peanut butter with anything is awesome..
    But Tahini is similar like that, so if you dont use peanut butter.. try tahini & lettuce, tahini & alfalfa or tahini & cucmber... mmmm they are on my lunch menu everyday!

    hummos and grated carrot goes down well here
    toastes sandwich with apple and cinnamon
    banana and peanut butter and cinnamon
    tuna, corn and mayo
    salmon - tinned with corn and mayo
    smoked salmon and cream cheese and cucumber
    egg and tomato
    cow cheeese and carrot
    pate
    cheese and pickle
    turkey and cranberry wirh spinach

    Awesome! That is exactly what I was looking for and that list has expanded my repertoir no end!

    Yummy, keep them coming!

    It's amazing how you get stuck on one or two combos and then draw a blank. I am going to work my way through this list!

    My DD loves:

    tuna/bbq chicken with mayo, grated carrot and corn (all mixed up together)
    ham cheese and avo toasties
    cheese and chopped pickled onions
    egg mayo and celery/lettuce (all mixed)
    toad in the hole (ie, a piece of bread buttered on one side, cut out a shape with a cookie cutter big enough to fit an egg into it, put the bread in a fry pan buttered side down, put a fresh cracked egg into the hole in the bread and fry for a bit, then turn it over and hey presto, toad in the hole!)

    on some days, I will give her a peice of toast with butter and milo sprinkled on it
    or a HUGE favourite fairy bread
    or devon and tomato sauce

    I used to eat:

    Cheese (has to be hard cheese like cheddar slices), beetroot and celery
    peanut butter and sultanas
    Cream cheese and sliced dill gerkins
    baked beans and cheese toasties

    My mum loves sardines/salmon with chopped onion mixed into it and tomato

    Thanks for all of these excellent suggestions!

    I held an afternoon tea yesterday for DD's first birthday and we certainly had some fancy pants sandwiches!
