Friends with kids recently stayed at South Bank and really rate it. You're right on South Bank Parklands, there's a train station with direct connect to the Airtrain service, busway station to connect to anywhere that's too far to walk. The city is easy to walk to, and there's restaurants everywhere.
I stayed at the iStay River City on Mary St the last time I was down, it was AMAZING A couple of blocks from Queen St (a little bit of a walk to Central Station but no more than 5 minutes), we caught a taxi from the airport and it only cost us $35 (so split between a few people it worked out much cheaper than the train), fantastic views of the river and the city, the apartments were very clean, modern, were fully equipped (a proper kitchen, nice lounge, balcony, two plush bedrooms, two bathrooms and a washing machine/dryer/iron etc - REALLY handy if there will be little ones along for the trip as you basically have a complete set-up instead of making do with a microwave and bar-sized fridge) and really great prices, I think we paid $199 a night for a 2-bedroom apartment, 1-bedrooms are about $130ish).
Very close to everything, secure (have to swipe your key to get into the elevator), lots of food and coffee shops and general shopping in the immediate vicinity, I will definitely be booking in there every time I visit Brisbane from now on
