Well every Christmas I spend 6 months searching for the hottest spiciest condiments, lollies, chocolate, cookies etc for my mum's partner.
He's a chilli FREAK, the thing that really comes to mind is a wasabi and chilli mustard he likes, I love chilli too but this stuff brings water to my eyes just smelling it!
And I was thinking that maybe I should have a go at making some stuff instead of buying it. So what are your tried and tested hottest, spiciest recipes for things I can bottle or package up?
Thanks heaps, I've looked a lot on a net and have a few ideas but I want to try some more interesting combinations and would prefer something someone has already tested because there are so many dodgy recipes out there!
I have a recipe for double chocolate chilli biscuits. Have made them, but they weren't very hot to me (bit of a chilli freak), but you could just add an extra chilli or two (or hotter chillis). I can post the recipe if you would like. They were yum though. Think crunchy dark chocolate biscuits, with chilli.
I also have a recipe somewhere for some super hot chicken wings or similar. It might be a dry rub or marinade, which would go well in a jar for a gift.
It will give me something positive to think of instead of this other bs. Thanks!
250g butter, softened
1 tsp vanilla extract
¾ cup caster sugar
¾ cup firmly packed brown sugar
1 egg
2 cups plain flour
¼ cup cocoa powder
1 tsp bicarbonate of soda
400g dark eating chocolate, chopped coarsely
Candied Chillies
¼ cup caster sugar
¼ cup water
3 fresh red thai chillies, chopped finely
Preheat oven to 180°C/160°C fan-forced. Grease oven trays, and line with baking paper.
Make candied chillies.
Beat butter, vanilla, sugars, and egg in small bowl with electric mixer until light and fluffy; transfer to large bowl.
Stir in sifted flour, cocoa and soda in two batches. Stir in chilli and chocolate.
Roll level tablespoons of dough into balls; place about 5cm apart on oven trays. Bake about 12 minutes. Cool on trays.
Candied Chillies
Stir sugar and the water in small saucepan over heat until sugar dissolves. Add chilli, boil 2 minutes; leave to cool. Strain, and discard syrup.

Makes crunchy biscuits, but super yummy. Not too hot, but I like my chilli. If you want it hotter, use hotter chillis, or more of them. Maybe five or six?
