    I use this recipe:

    Date and Lemon Scones

    Ingredients
    150ml-175ml milk
    150ml cream
    1 egg
    3 cups self-raising flour
    2 tbs caster sugar
    1 cup chopped, dried dates
    Finely grated rind 1 lemon
    Cream & jam, to serve

    Save to Cookbook

    Method
    Makes 12
    1. Preheat oven 200°C fan forced. Line large flat oven tray with baking paper.

    2. Whisk 150ml milk, cream and egg together until well combined. Combine flour, sugar, dates and lemon rind in a large bowl. Add milk mixture and stir gently to a soft dough, adding remaining milk if necessary. Turn onto a lightly floured surface and knead gently until dough comes together.

    3. Press dough out to 2cm-thick. Cut scones from dough and place onto tray flat-side up. Press dough together gently and repeat using the remaining dough. Brush the tops with milk and sprinkle with a little sugar. Bake 12-15 minutes until golden and well risen. Serve hot with jam and cream.
It's from Masterchef believe it or not, and it is awesome. I've even omitted the lemon and dates and it is fantastic. And no messy rubbing butter or anything.

This is my Neverfail scone recipe which I have been making for years.
    3 cups SR flour
    1tb melted butter
    1tb icing sugar
3/4-1 cup milk ( I usually use nearly a whole cup)
    Method
Add melted butter to milk, pour over flour and sugar. Mix together then press out onto a floured board. I just push mine around to get the desired thickness. Cut into scone shapes bake in mod oven for 10- 15 mins.
I sometimes brush mine with milk before cooking too.

I make lemonade scones. They are awesome!
I don't 'play' with the mix more than I have to also, which makes fluffier scones.

    325g self-raising flour
    2/3 cup cold lemonade
    2/3 cup thickened cream
Basically just add all the ingredients together in a bowl and mix with a knife. When the mix is all combined, tip it onto a lightly floured bench and cut with a floured cutter or cup.
I also double the mixture as my family loves them.

Depends on how big you want them. It makes about 6-8 fairly big ones.

    S.R. Flour - 2 cups
    Salt - very small pinch
    Butter - 2 table spoons
    Milk - roughly 1 cup.

Rub butter into flour and salt, slowly add milk until a dough forms, roll out, cut, bake.
    makes about 15 or so

Ok I finally had a chance to hunt down the recipe! (even though you probably don't need it anymore!)

    4 cups SR Flour
    Pinch salt
    300ml pouring cream
    300ml water

    Mix all together with knife
Tip onto floured surface and knead a little
Gently press to 1inch thick and cut out with desired cutter
Bake at 230C for 10mins on baking paper and tray.

Serve with cream and jam... YUM!!!

I half the recipe as it makes quite a bit.
