    Cheesecake Reciepe

    Can anyone help me out with an easy cheesecake recipe? Just a plain lemony type one.

    Easy Lemon Cheesecake
    1 1/4 cups sweet biscuit crumbs
    80g butter, melted

    500g block PHILADELPHIA Cream Cheese, softened
    400g can sweetened condensed milk
    3 teaspoons gelatine, dissolved in 1/4 cup boiling water
    1/3 cup lemon juice
    2 tablespoons grated lemon rind
    Method
    1.
    COMBINE biscuit crumbs and butter and press into the base of a 20cm springform pan; chill.
    2.
    BEAT Philly* using an electric mixer until smooth. Beat in condensed milk and gelatine mixture until smooth, then add lemon juice and rind and beat until combined.
    3.
    POUR mixture into prepared base and refrigerate 3 hours or overnight.

    I made a baked Lemon Cheesecake for our family xmas get together last week. I don't know if I'd call it easy but it turned out delicious AND was the first cheesecake I'd ever made!

    I'd second or is that third the philly one. My Mum always made it and I have made it, very easy. My Mum used to use cornflake crumbs as the base rather than biscuits, it is very nice and can last a few days in the fridge too!

    I have an easier one that is absolutely scrumptious...

    Base
    190g digestive biscuits, crushed
    90g butter, melted

    *Press into bottom of springform tin with potato masher

    Fill
    2 blocks light Philly, softened
    1 can condensed milk
    Juice of 2 large lemons

    *whip all together until well combined, poor on top of base and chill

    You don't need gelatine as the lemon juice sets it. Honestly it's the best cheesecake you'll ever eat! Yummy!

    Also grate some peppermint crisp on top for decoration...very yummy! The one that ~Stoked~ has posted is good also. It's the one I used to make before the I found the other philly one.
    The one with gelatine in it sets a little better.

    You'll love this one then! I hate gelatin!
    Just be sure to use ripe lemons cos if they're even a tiny bit green it won't set. And don't use the bottled lemon juice either.

    I was coming to post the Philly one... I have been making it for years, and we have never found anything we like better (in fact my kids don't consider it 'cheesecake' if it's baked or in any way too far different from that recipe )
