I have chicken (breast) out for dinner but no idea what to actually cook. We have heaps of veggies:
Potato, pumpkin, peas, zucchini, capsicums (red and green) carrots, onions, spring onions, corn and im sure theres more but i cbf getting up to look!
We also have most pantry staples:
flour, eggs, milk, lemon, soy sauce, ginger (infact most herbs and spices), garlic, pasta, rice, noodles, balsamic vinegar, white and red wine vinegar, breadcrumbs, cheese the list goes on and on
But I'm stuck on any ideas so open to all suggestions!!
Pasta bake. Cooked pasta (penne/spirals/whatever you have that is short), with chopped up chicken (browned and cooked), and veges (peas, zucchini, chopped capsicum (maybe half of a red, and half of a green), chopped and cooked carrots, chopped spring onions, and corn), in a white sauce, with cheese and breadcrumbs on the top. In the oven to heat through and melt cheese and brown breadcrumbs.
Or instead of making it into a 'bake', just mix the cooked chicken and vege in with the sauce and spoon over cooked noodles.
The capsicums, by the way, will keep well in the freezer, uncooked if need be. I chop mine up then into a freezer bag.

steam the vegies, cook chicken and shread it, make a white or cheese sauce.. mix together then make mash top
Roast the caps, zuchinni, onion, herbs if you have them and dust them with paprika, then puree it. Use a narrow sharp knife, like a paring knife, to make a pocket down into the fattest end of the breast, widen it with your finger (don't go to low or you will burst the cavity ).
Get a piping bag and a narrow nozzle (baking paper or a zip lock bag work just as well) and pipe the puree mix into the chicken.
Wrap the chicken breasts in foil with a little water (you can use wine/stock/cream) and seal them like a little parcel and pop them in the moderate oven, they will cook in about 15 mins.
super yummy, super easy, and best of all, they are actually pretty quick to make.
