thread: Scotch roast

    Scotch roast

    So, I bought this huge slab of scotch...slab (fillet? a lot bigger than a fillet!), and I've been doing different things with bits of it - slow cooker roast, steaks, stirfy. Tonight I wanna have a stuffed roast, but I don't know what to stuff it with.

    Here's some interesting ingredients I have in my cupboards -

    Fetta
    Dried apricots/figs/prunes
    Couscous
    Grated cheese
    Spring onion
    Red onion
    Garlic

    Have other stuff as well, but those are the likely candidates I think. Can anyone give me some help?

    Cook up the cous cous and add the dried fruits, onion, garlic, crumble in the fetta and add some chopped nuts and fresh herbs if you have them. Would probably go best with lamb but pretty much anything goes with beef.
    Or you could caramelise the red onions (if you have lots) and stuff that in
